How to Infuse Tea Flavours into Your Baked Goods

Tea-Infused Milk or Cream: Steep tea leaves in warm milk or cream to create a base for cakes, custards, or frostings. We love to infuse our Lavender Hill into warm milk and cream to make the most delicious Panna Cotta, which we then set into a delicate chocolate pastry case and decorate with delicate flower petals. Pink tea also infuses beautifully with coconut milk for some gorgeous South Asian inspired desserts.
Tea Powder: Use finely ground tea, like matcha or chai, in batters or doughs for added flavour and colour. Our little twins love chai infused pancakes for breakfast, with a drizzle of local bees honey! My dad is rather partial to a tea infused fruit loaf cake, and as well as soaking fruits in brewed tea we also add ground tea to the mix.
Tea Syrups: Make a simple syrup with brewed tea to brush on cakes or drizzle over desserts. A rich caramel black tea like our golden feathers is an absolute jewel as a tea syrup, and poured over a simply divine Cornish ice cream or breakfast yoghurt adds a special touch.

Our family favorite is autumnal pears poached in our Silver Feathers white tea, and if you pop them in canning jars after you can savor them well into the winter.
